    • Executive Chef. Responsible for a complete overhaul of menus and kitchen operations. Launching brand new menu, shifting the restaurant from Japanese and Sushi to Modern Asian (a fusion of Western and Asian techniques centered on flavors from across Asia). Recipe development, menu costing, Kitchen and Front of House Training, improving quality while reducing both food cost and kitchen labor cost.
