    - Evaluation and comparison of the composition of two different milk using MilkoScan and CE analysis. Afterwards, an in vitro digestion was performed to study the production of peptides in human body. The process was evaluated by quantification of the Degree of Hydrolysis; - Characterization by LC-MS of peptide profiles and their comparison (amount of peptides and their dimensions) between different digestion times and different milk samples; - An in silico study of the LC-MS profiles was applied to evaluate the presence of bioactive peptides; - Bioactivity assays were performed to quantify and compare the activity of the digested samples (comparison between different digestion times and different milk samples).
