    LINES OF WORK: dairy, microbiology, starters and adjuncts, flavour in cheese and yogurt, cheese making, physico-chemical analysis, biosafety, bacteriocins, antimicrobial resistance, bacteriophages, phage proteins, Lactococcus lactis, Streptococcus thermophilus, Escherichia coli, stress response, bacterial cell wall, adaptative evolution, molecular biology, heterologous proteins production. TECHNIQUES AND SKILLS: Microbiology: bacteria and bacteriophages. Molecular biology: nucleic acids, genetic engineering, PFGE, qRT-PCR; proteins, immunodetection (ELISA and Western Blot), heterologous production of recombinant proteins. Cheese making in pilot plant; yogurt making at lab-scale. Physicochemical analysis. Chromatography: protein purification by FPLC. HPLC and GC-MS data analysis. Cell lines culture. Electron microscopy: cryotome and imaging. Bioinformatics: databases, DNA and protein sequence analysis, genome analysis and annotation.
